I should have specified "no film composer", because of the time limit they have to write their FILM music, but I thought this was what this board was all about... ^^

Of course, Herrmann never used an orchestrator either.
But certainly composers like Williams, Rozsa, Korngold, Holdridge, Broughton etc. who wrote plenty of 'concert music' didn't use orchestrators for their non film work.

I'm not sure which is the "most" innovative, but the ones that impress me the most are still Goldsmith's Planet of the Apes and John Corigliano's Altered States. Some of Toru Takemitsu's scores like Rikiyu and Woman in the Dunes are pretty innovative as well. And of course Vangelis' Blade Runner, which remains a milestone in electro-acoustic scoring.

Of course, two even more famous M's were well known to be able to basically 'write in their head' as it were -- Mozart and Mendelssohn. The later would in fact write out the entire orchestration each bar before continuing, whereas the former...well apparently he could compose everything while doing other things such as playing billiards and anything put to score was just copying it out (the movie Amadeus may get many things wrong, but in that factor it's reletively accurate).
