Two master orchestrators, fond of the good-old-fashioned pencil method, who haven't been mentioned yet in this thread: Howard Shore and the late Shirley Walker.

A guy I've always admired is George Fenton, who is a true all-rounder. Classically trained, and he can orchestrate, conduct, is also well-versed in jazz, rock/pop. He is also a singer, and even an accomplished performer of Indian instruments (which he performed on Jarre's The Man Who Would Be King).

I would like to mention a wonderful orchestral film composer that contributes to the legacy of the 80's golden age. That's Aaron Zigman. His emotional or rousing compositions for The Notebook, Bridge to Terabithia or Flicka are absolutely breathtaking. His recent score for Escape from Planet Earth (on Sony Classical) is nothing less than a pure golden score in the great tradition of adventure scores of the 80's.
